How to make Chia Pudding
Making chia pudding is so easy! Just combine 3 tbsp of chia seeds with 1/2 cup of your milk of choice and allow 10-15 minutes for the chia seeds to congeal. I use reduced fat coconut milk for this recipe.
How to make caramelized bananas for banana chia pudding
- Thinly slice half of a medium banana and coat each side of each slice in the brown sugar.
- Melt a tbsp of butter into a pan
- Place each coated banana slice flat in the pan and allow 1 minute on each side to cook and caramelize. Remove from heat.
Assemble the Banana Chia Pudding
Top the congealed chia pudding with the caramelized banana slices and any other optional topping. Enjoy this treat immediately with the warm caramelized bananas, or store in an airtight container in the refrigerator for up to 2 days.

Recipe Notes:
I find that the sweetness from the caramelized bananas to be enough for the whole chia pudding. If you prefer a sweeter treat though, add in 1 tbsp of honey or maple syrup when you are combining the chia seeds and coconut milk.
This Banana Chia Pudding is one of my favorite mid-day treats. The fiber will help keep you full for a few hours and the sugar combined with the healthy fat from the coconut milk offers you a boost of energy to help get though the second half of the day and to evening time!
