Spinach Arugula Salad

This spinach arugula salad is a staple in our household, finding its place on our table at least three times a week. The combination of fresh spinach and peppery arugula creates a vibrant base, while the simple lemon vinaigrette and fresh herbs add a bright, zesty touch.

Spinach arugula salad

Ingredients:

  • 5 fresh green onions, chopped
  • 1 small Shallot, thinly sliced
  • 1/4 cup Italian Parsley, chopped
  • 2 cups Fresh Arugula (the base of this spinach arugula salad)
  • 2 cups Fresh Spinach, chopped
  • 5 tbsp Olive Oil
  • 1 small Lemon
  • 1 tbsp Coarse French Grey Salt

How to make this Spinach Arugula Salad:

  • In a small bowl, whisk together the olive oil and juice from the lemon and set aside.
  • Roughly chop the spinach, then finely chop the green onions and Italian parsley. Then thinly slice the shallot.
  • In a large bowl, combine the arugula, spinach, green onions, shallot, and Italian parsley.
  • Pour the olive oil/lemon juice mixture over the salad and toss gently to coat all the ingredients.
  • Add the coarse grey salt and lightly toss to coat the salad.
  • Serve immediately while the greens are fresh and crisp.
