Ingredients:
For 1 Fig Mocktail:
- 1/3 cup Fig syrup
- 1/3 cup Perrier Peach (or any unsweetened peach flavored sparkling water)
For the homemade Fig Syrup:
- 2 cups quartered fresh figs
- 1 cup water
- 3/4 cups raw sugar
- 1 sprig Fresh Thyme
- 1 tsp vanilla extract
How to make a Fig Mocktail:
Fill a glass with ice and pour 1/3 cup of the fig syrup into the cup. Top with the peach sparkling water and a fresh fig garnish.
How to make the homemade fig syrup for the fig mocktail:
- In a medium saucepan, combine the quartered figs, thyme, water, and sugar. Bring the mixture to a simmer over medium heat, stirring occasionally until the sugar dissolves.
- Reduce the heat to low and continue to simmer for 5-10 minutes, or until the figs are very soft. Mash the figs with a potato masher or the back of a spoon to help release their juices.
- Set a fine-mesh sieve over a heat-safe bowl or jar. Carefully pour the fig mixture into the sieve, allowing the syrup to strain through. Use a spoon or spatula to press on the solids to extract as much syrup as possible.
- Stir in the vanilla extract.
- Let the syrup cool completely before transferring it to an airtight container. Store the fig syrup in the refrigerator for up to 5 days or use immediately to make a fresh Fig Mocktail
